Title: Study on hydrolysis of soybean protein isolate by alcalase
Abstract: Hydrolysis process for soybeen protein isolate with Alcalase was studied. And the effects of the main parameters including pH, hydrolysis temperature, enzyme concentration, substrate concentration, hydrolysis time on hydrolysis reaction were investigated. The optimum conditions had been found by mono-factor analysis and orthogonal test as follows, pH: 8.0, hydrolysing temperature: 60 ℃, enzyme concentration: 1 000 u per gram of substrate, substrate concentration: 3%, hydrolysis time: 2 h.
