{'【目的】管理栄養士・栄養士が配置されていない徳島県立高等学校総合寄宿舎(以下寮と略す)に,管理栄養士が立てた献立表を提供することにより,寮食の改善が見られるかについて検討した。【方法】寮とは関係のない施設に勤務する管理栄養士が2010年4月より,寮食の献立表を1ヶ月単位で作成し,徳島県教育委員会を通じて各寮にメールで配信した。寮食が改善されたかどうかの検討は,管理栄養士が立てた献立表(2010年11月)と,以前の献立表(2009年11月)それぞれ20日分を比較することにより行った。給与栄養量,食品群別給与量,エネルギー比率を比較した。また,献立表提供前後の寮食を喫食した寮生に対して質問紙調査を行った。【結果】管理栄養士による献立表提供後の給与栄養量は,カルシウム,ビタミンA,ビタミンB1,ビタミンB2,ビタミンC,食物繊維において有意に増加した。食品群別給与量も,献立表提供後において,種実類,野菜類,果実類,きのこ類,乳類等が有意に増加した。エネルギー比率については,脂質エネルギー比率は有意な低下が見られた。質問紙調査の結果,64.5%の寮生は,現在の寮食が献立表提供前と比べて変わったと感じていることが分かった。【結論】献立表提供前後の給与栄養量,食品群別給与量,エネルギー比率等を比較した結果,管理栄養士による献立表提供により寮食の改善につながることが示された。':
