Abstract: Heat exchangers are common equipment in food industry and are used to transfer heat between two fluids with different temperatures. The article describes the parameters influencing the dimensioning of the heat exchanger. The design of heat exchangers is important as they need be designed in a proper way to achieve efficient cleaning for both short and long running time requirements. Different types of heat exchangers common in food industry are described; plate heat exchangers, tubular heat exchangers, scraped-surface heat exchangers and coiled heat exchangers.
