Title: Studies on the Manufacture of Wagami. (Part 5)
Abstract: We considered on the relation between the quantity of combined alkali and that of dissolved substance for the sake of the investigation mechanism of Mitsumata component in alkali cooking, (in this report, NaOH cooking), and obtained the following conclusions : (1) There is the proportional relation between the quantity of combined alkali and that of dissolved substance.(2) The alkali combining reaction takes place in Mitsumata and it is thought that the dissolved substance in soln., does not react with further alkali.(3) The concentration of alkali-combined-substance (in soln.) increases in proportion to the quantity of combined-alkali.(4) As the process of dissolution, we considered that NaOH in the soln. penetrates into the Mitsumata and formed Na-salt by alkali- combining-reaction, and this formed Na-salt is dissolved out into soln. for the increase of hydrophilic properties.
