Abstract: DR. L. A. ALLEN, of the recently founded Hannah Dairy Research Institute, has brought together and reviewed, in the publication before us, the facts relating to the preparation of condensed and dried milk products. The pamphlet appears at an opportune time, since for reasons of national economy efforts are now being made in Great Britain to increase supplies of home-produced foods. Large amounts of condensed and dried milk are imported annually into the country, the totals for 1931 being given as 2,700,000 cwt. and 250,000 cwt. respectively.
