Title: Inhibition of fungal growth with potassium sorbate
Abstract: The influence of potassium sorbate on growth of five strains of Aspergillus versicolor and six strains of Eurotium herbariorum, xerophilic fungi potential contaminents of meat products, was investigated in laboratory conditions. Significant antifungal activity on solid medium was recorded at concentrations of potassium sorbate 0.05% (E. herbariorum) and higher than 0.1% (A. versicolor). The inhibitory concentration was 0.25% for one strain of A. versicolor and five strains of E. herbariorum, and 0.5% for all others. A. versicolor B155 grew in yeast extract - saccharose liquid medium containing 0,5% of potassium sorbate, whereas the synthesis of toxic metabolite sterigmatocystin (ST) was detected only at lower levels (0.05 and 0.1%). The reduction of synthesized ST was 58.3 and 66.7%, respectively.
