Title: Maltose fermentation in saccharomyces cerevisiae
Abstract: Several studies have been published investigating the possible correlation between maltose fermentation and leavening activity of baker's yeast. In some cases a positive correlation was found between the rate of maltose fermentation with activities of maltose permease and maltase. Although the literature data were discouraging we tried to increase the CO 2 production of commercial baker's yeast strains by increasing the capacity to ferment maltose
