Abstract: A series of high-profile outbreaks of foodborne illnesses and product recalls have highlighted the product safety risks that can arise in food chains. Food safety is regarded as a supply chain management problem since supply chain partners may incur losses from a safety problem they weren't responsible for. The purpose of this article is to examine distinctive safety problems in food chains created by the inherent variations in food materials and the complexity of global supply chains. Based on a risk profile by Spink and Moyer (2011), four different categories of food safety risks are described and appropriate risk mitigation strategies are discussed.
