Title: KINETICS OF SUGAR AND AMINO ACID CONSUMPTION, YEAST GROWTH, AND ETHANOL PRODUCTION DURING BEER FERMENTATION
Abstract: In order to establish the influence of the wort chemical composition and the fermentation process parameters on the spectrum of beer aromas, the precise kinetics of sugar and amino acids assimilation, of yeast growth and ethanol production has been determined during beer fermentation in pilot plant fermentors. Based on the experimental results a kinetic model, taking into consideration yeast growth and flocculation, sugar and amino acid kinetic limitations, ethanol inhibition and glucose repression, is proposed.
