Title: Bestimmung phenolischer Inhaltsstoffe in pigmentierten Kartoffelsorten (Solanum tuberosum L.)
Abstract: Total polyphenols, monomeric anthocyanins, chlorogenic acids, and anthocyanin composition were evaluated in eight different red- and blue-fleshed potato varieties by means of photometric, high-performance liquid chromatographic, as well as mass spectrometric techniques. The radical scavenging activity of pigmented potato extracts was analyzed using the TEAC assay. Total polyphenols ranged from 75 to 208 mg gallic acid equivalent (GAE)/100 g fresh weight (FW). For the contents of monomeric anthocyanins and chlorogenic acids values between 13.0 to 113.1 mg/100 g FW and 14.8 to 66.4 mg/100 g FW have been determined. The antioxidant activity varied from 325 to 1095 μmol trolox equivalents (TE)/100 g FW. A comparison of the cultivars showed significant differences in anthocyanin composition. It was found that red-fleshed potatoes predominantly contain pelargonidin derivatives and the major pigment was identified as pelargonidin-3-p-coumaroylrutinoside-5-glucoside while the blue potato varieties show a complex composition of several acylated anthocyanins. The main pigments of blue-fleshed potato cultivars were determined by HPLC-ESI-MS n as 3-coumaroylrutinoside-5-glucosides of petunidin, malvidin, and peonidin, respectively.
