Title: Effect of AA and FF caprine αs1-casein variants on cheesemaking
Abstract: Les laits de deux lots de chevres homozygotes AA ou FF au locus de la caseine α s1 ont ete compares en transformation fromagere au cours de deux lactations successives en 1992 et 1993, dans un meme troupeau. Les resultats obtenus montrent l'effet tres favorable de l'allele A sur la richesse du lait en proteines, en caseines et en matiere grasse. En consequence, le lait A se caracterise par une meilleure aptitude fromagere que le lait F (rendements fromagers plus eleves, coefficient de recuperation en matiere seche superieur) en technologie traditionnelle type pâte molle (PM) ou en technologie modele type pâte pressee (PP). La technologie modele PP permet de mieux discriminer les fromages A des fromages F que la technologie PM en raison d'une meilleure maitrise de l'egouttage des fromages et de l'absence de flore de surface. Le suivi de la proteolyse permet de montrer, en 1992, et quelle que soit la technologie employee, des differences qualitatives dans la degradation des caseines (electrophoreses des caseines et profils CLHP des peptides). En 1993, la bonne maitrise de l'extrait sec des fromages type PP permet de mettre en evidence une intensite globale de la proteolyse (proportion de gros peptides dans l'azote total) plus prononcee, mais non significative, pour les fromages A que pour les fromages F (respectivement 14,4 contre 12,8 % en fin d'affinage). Pour la lipolyse, la principale difference entre les laits A et F reside dans le taux initial d'acides gras libres pendant la periode avril-juin. Le phenomene est bien mis en evidence en 1992 (taux environ 2 fois plus eleve pour F que pour A) mais beaucoup moins marque en 1993; il apparait cependant dans les resultats d'acidite grasse libre des laits (BDI) a la reception et d'activite lipasique sur tributyrine. Les profils des acides gras totaux, pendant la periode critique en 1992, montrent tres peu de differences entre les fromages A et F; les ecarts les plus forts concernent les acides C 16:0 (19,6 % pour A et 20,7 % pour F) et C 18:0 (7,4 % pour A et 6,8 % pour F). L'analyse des caracteristiques rheologiques et sensorielles met en evidence un effet du variant de la caseine α s1 sur la texture (fermete) et la flaveur (gout chevre) des produits. En technologie PM, aucune difference significative de texture n'a ete mise en evidence (probablement en raison de la variabilite de l'extrait sec des fromages) mais les fromages F, fabriques en 1993, presentent un gout chevre significativement plus prononce. En technologie PP, les fromages A presentent une texture plus ferme que les fromages F mais un gout chevre plus faible. Les differences sont plus marquees en 1992 qu'en 1993. Elles sont maximales a mi-affinage (30 jours). Quelle que soit la technologie, l'augmentation de gout chevre des fromages F fabriques pendant la periode avril-juin coincide avec l'elevation du taux initial d'acides gras libres de ces fromages.
