Raoultella ornithinolytica (formerly Klebsiella ornithinolytica) has been recovered from water, soil, plants and occasionally mammalian mucosae. It is one of the organisms that cause histamine fish poisoning by converting histidine to histamine as it possesses the enzyme histidine decarboxylase.
