Some strains of Candida species and Hanseniaspora uvarum/Kloeckera apiculata produced extracellular proteolytic or lipolytic activities. Most yeasts exhibited β-glucosidase activity, but particularly high activity was observed in strains of Pichia anomala/Candida pelliculosa (formerly Hansenula anomala) and Hanseniaspora uvarum/Kloeckera apiculata. The potential impact of these enzymes on wine quality is discussed. Abbreviations C. Candida; Deb. Debaryomyces; H. Hansenula; H'spora Hanseniaspora; I. Issatchenkia; Kl. Kloeckera; M. Metschnikowia; 4-MUG 4-methylumbelliferyl-β-D-glucopyranoside; MYGP Malt extract, Yeast extract, Glucose, Peptone; P. Pichia; p-NP p-nitrophenol; p-NPG p-nitrophenyl-β-D-glucopyranoside; Sacch. Saccharomyces; T'spora Torulaspora; TCA trichloroacetic acid; YNB Yeast Nitrogen Base; YNBw Yeast Nitrogen without amino acids and ammonium sulfate.
