Title: The identification of an α-amylase in aqueous extracts of the hepatopancreas of Carcinus maenas, the common shore crab
Abstract: Abstract 1. 1. The amylolytic properties of aqueous extracts of the hepatopancreas of Carcinus maenas were as below: 2. 2. The amylolytic activity was optimal at pH 7 and 40°C. 3. 3. At 0·1 M sodium halide, the enzymic activity was optimal. Chloride ions had the maximum activating effect. 4. 4. Dialysis against EDTA reduced the amylolytic activity of the aqueous extract. Enzymic activity was restored on the addition of calcium ions. 5. 5. 60 per cent of a β-limit dextrin was hydrolysed by the aqueous extract. 6. 6. The apparent energy of activation of the amylolytic reaction was 8000 cal/mole. 7. 7. The enzyme in the aqueous extract was identified as an α-amylase.
