Title: A New Cultivar of Caraway (<i>Carum carvi</i>L.) and Its Essential Oil
Abstract: A new biennial cultivar, that flowers and produces fruits in the first year of growth, was selected from commercial biennial varieties of caraway. This cultivar was selected also for non-shattering seeds. Of the constituents, 18 were identified in the essential oil obtained by hydrodistillation from fruits of annual and biennial varieties of caraway, including the new cultivar. The 2 main compounds in the various caraway oils are limonene (34%-50%) and carvone (47%-62%). The 16 other compounds constitute less than 0.5% of the essential oil. The cultivar of the new selection was observed to have a low carvone content (47%) and a relatively high limonene content (50%).
