Title: Correlations Between Coagulation Properties of Milk and Cheese Yielding Capacity and Cheese Composition
Abstract: On a monthly basis, approximately 4 L of milk were collected from each of 53 Holstein cows during the morning milking for one entire lactation. Subsamples of milk were analyzed by a forma-graph for coagulating properties which were expressed as rennet clotting time, rate of firming and curd firmness. Cheese yielding capacity, gross composition of resulting cheese, and losses of milk components in the whey were also determined. Partial correlation coefficients between coagulating properties and cheese yield, cheese composition and milk components in whey were calculated. All three formagraphic parameters were correlated (p<.01) with 37% moisture-adjusted yield with coefficients of –.23, –.29, and .29 respectively. Cheese fat and protein, either when corrected or uncorrected for moisture content, were associated with rennet clotting time, rate of firming, and curd firmness. Faster rate of coagulation and firmer curd were correlated (P<.01) with a decrease in losses of milk fat, protein, and total solids in whey. Des échantillons d'environ 4 L de lait furent recueillis sur une base mensuelle de chacune de 53 vaches Holstein au cours de la traite du matin pendant toute une période de lactation. Des souséchantillons de lait furent analysés à l'aide d'un formagraphe pour les propriétés de coagulation à la présure, taux de raffermis sement et fermeté du caillé. La capacité de rendement en fromage, la composition brute du fromage obtenu et les pertes de consti tuants laitiers dans le lactosérum furent aussi déterminées. Les coefficients de coagulation partiels entre les propriétés de coagula tion et le rendement en fromage, la composition du fromage et les constituants laitiers dans le lactosérum furent calculés. Tous ces paramètres formagraphiques furent corrélés (p < .01) avec le ren dement ajusté à 37% d'humidité, respectivement avec des coefficients de −0.23, −0.29 et 0.29. Les teneur en matière grasse et en protéine du fromage, corrigées ou non pour l'humidité, furent associées au temps de coagulation par la présure, au taux de raffermissement, et à la fermeté du caillé. Les taux de coagulation plus rapides et les caillés plus fermes furent corrélés (p < .01) avec la diminution des pertes de matière grasse, de protéine et de solides totaux dans le lactosérum.
