Title: The effect of drying kinetics on peppermint quality
Abstract: Considering the effect of air temperature, the drying kinetics of peppermint in thin layer drying were investigated in this study. It is apparent that thin layer drying rates increased with dry bulb temperature. The calculated values of the drying constant were found to vary between 0.932–5.209 h−1 over the experimental range of drying temperature. It was seen that dry bulb temperature has a great effect on the drying constant. The drying constant in the logarithmic model was correlated with the dry bulb temperature. The temperature dependency of the drying constant is evaluated with Arrhenius equation and the activation energy for peppermint was found to be 3793.19 kj/kg. The changes in the drying constant with temperature were correlated as k=2.84×10−11 exp (−8212.94/T).
