Title: Carotenoids in Gac Fruit Aril – Structure and Bioaccessibility
Abstract: Gac fruit aril, having a dark-red colour at full ripeness, contains outstandingly high levels of carotenoids, predominantly lycopene and β-carotene, in addition to their (Z)-isomers, as well as minor α- and γ-carotenes and xanthophylls. Carotenoid contents therein range widely from 13.4 to 1083.0 mg per 100 g of aril fresh weight and are likely to be affected by growing region, the stage of fruit ripeness at harvest and postharvest storage. As Gac fruit is traditionally harvested for a limited period, processed Gac fruit aril products, such as powder and oil, offer alternatives to the highly perishable fresh arils. Processing of fresh Gac fruit arils has substantial effects on the carotenoid contents of the final powder or oil products. The outstanding bioaccessibility of carotenoids therein might also be altered by processing. In the present chapter, an overview of the carotenoid composition of fresh Gac fruit arils and products derived therefrom is presented considering currently available forms purchased by consumers. Furthermore, the microstructure of carotenoids from Gac fruit aril and their bioaccessibility are discussed.
